- 2 fillets (6 oz.).
- 4 jumbo shrimp (large) (cleaned)

- 2 sticks of butter

- Preheat oven to 350 degrees
- For the bearnaise sauce: I used béarnaise sauce that I had left in the fridge to make the mixture more buttery. I take it out a few hours before to reduce the chill, but it will still hold up well.
- In a small pot, add the butter, garlic, 2 Tbsp of garlic and heat until combined.
- Add a few tablespoons of butter to a casserole dish and heat until bubbly. Add the prawns to the shell and cook for about a minute on each side, then add your simmering stock and cover over low heat.
- Season the fillets with salt and pepper and in the same pan as the prawns, add a dollop of butter and fry the fillets until browned on both sides. Add to the oven and cook on medium heat for 10 minutes
- Remove the fillets from the oven and let them rest. At this point, add another tablespoon of butter and stir in the juices to make the pan sauce. Put the folder on the table. Remove the crab shells, but not the shells and scales around the fillets. Pour in some pan sauce and add cold Béarnaise sauce, sprinkle with dried tarragon and serve.
