- Place the shrimp in a small bowl and add enough olive oil to cover 2/3 of the way. Reduce the heat. Cook the shrimp, stirring slowly so that each shrimp has a chance to soak in the boiling oil. until it starts to turn pink (5-10 minutes). Transfer the shrimp to a plate and refrigerate. Do not discard the oil.
- Add a little shrimp oil to a medium-sized skillet over medium-high heat. Add the onion and fry for 3-4 minutes until soft and slightly golden. - Place pan of chorizo over medium-high heat. When hot, add the shrimp and a little shrimp oil. Cook for 2 minutes to heat through the shrimp. Add the parsley, then pour the mixture over the polenta.
